Thanksgiving Helpful Eating Tips

Welcome to KidneyTalk with your co-hosts Lori Hartwell and Stephen Furst.

This week’s guest is Sarah Colman, a registered renal dietitian and co-author of “Cooking for David.” She offers tips for making a great Thanksgiving meal renal-friendly. Listen in as Lori and Stephen talk turkey and share some of their favorite holiday recipes.
 

Holiday Appetizer - Horseradish Spread with Melba Toast

Recipe from Cooking for David: A Culinary Dialysis Cookbook by
Sara Colman, RD, CSR, CDE and Dorothy Gordon, RN

Servings: 8
Serving size: 3 Melba toast rounds and 3 teaspoons of Horseradish Spread

Ingredients:
6 tablespoons reduced fat cream cheese
2 tablespoons sour cream
1 teaspoon horseradish sauce
1 teaspoon Worcestershire sauce
1 teaspoon Mrs. Dash® onion herb seasoning
24 Melba toast rounds parsley and paprika for garnish

Preparations:
1. Combine cream cheese and sour cream. Stir in horseradish, Worcestershire sauce and Mrs. Dash® herb seasoning.
2. Place 1 teaspoon spread on each piece of Melba toast.
3. Garnish with a small piece of parsley and a dash of paprika.

Carbohydrate 9g
Fat 3g
Cholesterol 7 mg
Sodium 126 mg
Potassium 40 mg

Renal and Renal Diabetic Food Choices:
1/2 Starch
1/2 Fat

Helpful Hint:
Low sodium crackers can be substituted for Melba toast rounds.
