Among the things you can look forward to after receiving an awaited kidney transplant, food is a big deal. Once you have a working kidney you can start enjoying cheese, chocolate, potatoes, bananas, and numerous other foods (unless you have other dietary restrictions) that could have sent you to the ER prior. However, as Angelique Barber learned and wrote about in her winning essay for RSN’s 2014 Annual Essay Contest, that new enjoyment of food combined with the new meds is a recipe for weight gain, and it can happen fast.
